I HATE HATE HATE cutting up onions. This is actually something that I forget myself. If I can manage to remember, I’ll never buy another onion. I don’t think I’ve ever managed to chop an entire onion without having to leave the room midway through. I’m crying right now, just thinking about it. It’s so painful, and it’s just not worth it.
On that subject, I’ve got my dirty rice casserole in the oven right now, and I’m just trying to kill time until I can take it out and put it in the fridge. Then I’ll be able to eat from it for the rest of the week. Ah…bachelorhood. Last week was peanut butter and jelly on whole wheat. This week – dirty rice.
Added bonus: I finally found a use for the cream of mushroom and cream of celery soup I had around.

I am also not a fan of having to cut onions. I can’t even be in the kitchen when onions are being cut or even for half an hour after because i go blind. Here’s a trick i’ve learned, if you cut them under running water they don’t make you cry as much.

use a food processor.

Also, if you refridgerate the onion for a little while (30-60 min) before slice, it helps too
